A personal recepie

In a mixer, grind a handfull of black olives,  4 to 5 anchovies, 2 to 3 garlic  cloves , pepper. Mix the ingredients  until the whole gets smooth . Spread the paste "tapenade" on to canapés  and serve with a glass of cartagène, or wine  of the "Pays des Cévennes"



Le Mas

The provincial mas is located in a quiet rural setting surrounded by olive and cedar trees.  Depending on the seasons, one can find wild orchids, violets and irises.

In november/december, olives are harvested.  Different mills sell olives, olive oil and derived products such as "tapenade".

A 1 km walk takes you to the river "Cèze", the municipal pool  and to the town with its shops and services.

Saint Ambroix

s a village whose medieval quarters remind of a rich historical past. It is also well known for its legend of the "volo biou" (the flying ox) which is celebrated each year during July. Situated in the triangle Cévennes-Ardèche-Provence, it enables visitors to discover exceptional beauty spots at more or less an hour away: the Pont du Gard, the Camargue, the Parc National des Cévennes the Pont d'Arc in the Ardéche

Local produce

The originality of the Simon vineyard estate are its vines planted on terrassed slopes. The view on Saint Ambroix is superbe, and the grapes are collected manually.  The vintage "Augustin" which is mentioned in a well known national guide is produced here. Other vintages are Pinot Noir, Tannat, Chardonnay, Altus Augusti, Syrah..... and recently a sparkling rosé wine called "Badinage".

Other specialities are appreciated, such as : wines designated "pays des Cévennes" ; a liqueur wine called "cartagène" ;  the "pélardon" a well known goat cheese ;  chestnuts ; tapendade, an olive paste ; la brandade de morue, a paste made of codfish and olive oil, trouts raised in spring water.......
